1 pound posole corn - rinse well
2 quarts water
1-2 pounds chicken, pork or beef
1-2 Tablespoons salt
1 large onion, chopped
2-3 cloves garlic, minced
dash or oregano
½ teaspoon ground cumin
5-10 dried red chile pods, crushed or ½ - 1 cup red chile powder
Cover the posole corn with water and bring to a boil. Turn off heat and let posole soak for 2 hrs. Drain and add 2 quarts of fresh water. Brown cubes of meat in a small amount of oil and add to posole. Add remaining ingredients and water to cover. Continue to simmer for several more hours until meat is tender.
