6 large potatoes
1 lb. Cheddar cheese
1 onion, thinly sliced
6 large green chiles, roasted, peeled and diced or 1 cup chopped green
Boil potatoes until soft, but firm. Slice. Melt cheese with onion and chile. In an ovenproof dish, layer potatoes with melted cheese ending with cheese. Bake for 1 hour in 350 degree oven until cheese bubbles. Can be made ahead of time and baked later. Can substitute leftover baked potatoes.
