Green and red chile sauces are perfect for any meal of the day and the basis of New Mexican dishes that are only limited by your willingness to experiment:
Cooking oil (optional)
One small chopped onion
1-2 cloves garlic, minced or crushed
3-4 cups water or broth
½ to 2 cups green chile
Fresh - roasted, peeled and Chopped or, frozen and thawed (use liquid also) or, Just Plain Green Chile from the jar
1 tsp. salt (optional)
Use just enough oil to film the bottom of your pan (or use a non-stick pan) and lightly brown the onion and garlic. Add remaining ingredients and simmer at least 15 minutes. Serve over, or tucked into, just about anything but ice cream or chocolate pudding.
