3 cups cooked rice
½ yellow onion, chopped
4 green onions (tops and bottoms), chopped
2 ribs celery, chopped
2 hard-boiled eggs
½ cup sweet relish
½ cup chopped green chile
1 cup mayonnaise
½ cup Longhorn cheese, grated
1 tsp. paprika
dash of cayenne pepper
salt and pepper to taste
Combine all ingredients and chill for 3 to 4 hours. Serves 8.
