1-1½ lbs ground meat
2 cups Red Chile
1 small onion, diced
1 lb shredded jack or cheddar cheese
1 bag corn chips
This dish can be made as a casserole or on the stove for a quick meal. Brown the meat and onion and add the red chile. Simmer for 10 minutes. Place the corn chips in bowls and top with the cooked mixture. Add cheese to the bowls and serve. For a casserole, cook meat and onion together. When done, layer the chips and meat and pour sauce over that, add cheese, repeat layers. When finished, bake at 350 for 30 min. This is also a great dish to serve for a party, and kids love it! Serves 4-6.
