There's something about summer's first bite of fresh roasted green chile that just can't be duplicated. Although our frozen chile is wonderful and convenient, sometimes you just have to roast it yourself. Please make sure we have your order by Friday since the orders are sent to the farm Saturday. Our chile is picked on Monday and our preferred shipping is UPS 2nd Day Air on Tuesday for Thursday delivery. We make sure that you get the best chile New Mexico has to offer - hand picked, sorted and packed to assure that it reaches you in farm fresh condition. Shipping charges are included in the price.
To roast fresh green chile, puncture the skin and place the chiles 4-6 inches from the coals on an outdooor grill or under the broiler in the oven. The oven is a bit messy though. Check and turn often until the pods are uniformly browned and blistered. Cool in ice water for 10 minutes or so and either peel and bag or just bag and freeze with the peeling on since it slips off easily when the chile thaws. Use heavy duty freezer bags or everything in the freezer will smell like chile!
