4 cups white flour
2 tsp. baking powder
1½ tsp. salt
3 Tbsp. lard or shortening
1 cup water
Mix together flour, baking powder and salt. Mix lard or shortening into flour mixture. Add water and knead dough 5 minutes. Let stand ½ hour covered. (To make it easier, mix everything in a food processor and mix until dough forms a ball.) Form into round flat ball and roll out with rolling pin to about ? inch thick. Cook on griddle on top of stove. Brown on both sides. Serve with any New Mexican dish, as a snack or use to make sandwiches.
