2 lbs. hamburger
4 medium potatoes, washed (with skins)
1 large onion, diced
1 to 1½ cups grated sharp Cheddar cheese
garlic powder, salt and pepper to taste
Boil potatoes about 45 minutes until soft. Brown meat and onions. Drain. Dice the potatoes into the meat mixture. Add garlic, salt and pepper. Mix and mash thoroughly. Add cheese and mix until melted. Stuff taco shells and warm in 350 degree oven for 15 minutes. Garnish with lettuce, tomatoes, cheese, sour cream, salsa, etc. Tastes even better the next day.
