New Mexico Potato Salad

 

4 large potatoes, boiled with skins but still firm
4 large eggs, hard-boiled
5 stalks green onions, chopped (greens only)
6 large green chiles, chopped
2 cups mayonnaise
salt and pepper to taste

Chop potatoes and eggs into cubes. Add chopped onions and green chiles. Mix together with mayonnaise. Toss well. Salt and pepper to taste. Serves 6.
